Review of LeSel Nashville

Brunching at LeSel is like sitting down to a thoughtfully prepared French breakfast with that one individual (we all know at least one person like this!) who is somehow perfect, while still being down to earth and the warmest, friendliest person you’ve ever met. They’re effortlessly chic and beautiful without looking like they try at all. You should feel unnerved by their je ne sais quoi, but somehow instead you feel as relaxed as you would be while engulfed in a hug from someone who thinks you can do no wrong.

The first time I had brunch at LeSel was with my darling friend, Christina. She’s the person version of LeSel. Poised, gracious and gorgeous. I enjoyed the combination of her company with LeSel so much so that it instantly became my favorite new breakfast spot in Nashville. I went online and immediately made a reservation for the following Saturday so that my Mum and I could go together!

My second time at LeSel I had to take some photos for you so that you will hopefully obtain a glimpse of what I’m poorly attempting to convey! Since a picture is worth a thousand words, hopefully these images can explain its charm better than I can!

Gluten & Dairy Free Pancake Recipe

Gluten & Dairy Free Brunch-Worthy Pancake Recipe (Your non-gluten free friends will never know the difference!)

Since October 20th my husband and I embarked on a major eating/lifestyle change. After a lot of research we decided to start eating and exercising for our specific blood types.
It’s amazing how your blood type plays into what should go into your body. But it totally makes sense. Don’t believe me? Check out the scientific research.
Even though mine and my husband’s blood types are different, according to Dr. D’Adamo, neither of our blood types support the chemical functions for breaking down, processing and utilizing gluten of any kind. Gluten is two types of proteins found in wheat responsible for the elasticity in dough. Some people’s bodies simply cannot digest this compound. When you change recipes to non-wheat based flours you have to make up for the lack of elasticity found in Gluten. This can be done by mixing different types of non-wheat flours together and adding xantham gum and cornstarch. THIS is the best gluten free flour mix I’v discovered so far.
After we got over the gluten free hurdle we had to address the dairy free requirements of our new diet! Apparently my blood type was never meant to have diary unless it’s a very rare, small portion of goat’s milk or cheese. Since I refuse to make two separate meals, three times a day, my husband is on a 90% dairy free diet as well. His blood type can only have goat’s milk and cheese as well as occasional mozzarella so it really wasn’t too big of a sacrifice anyway.  For example, when we make gluten free pizza (crust) I put mozzarella on his half and he’s happy ^_^
Since we only just converted to this new lifestyle I still remember what all my wheat based goodies taste like! I was absolutely NOT willing to compromise taste and texture when creating an alternative pancake recipe! Here’s what I came up with (partially adapted from THIS recipe):

Gluten & Dairy Free Brunch-Worthy Pancake Recipe (Your non-gluten free friends will never know the difference!)

1 cup Gluten free flour mix
3/4 cups almond flour
2 Tbsp. Organic raw sugar or Truvia/Stevia
2 tsp. baking powder
1 tsp. cinnamon (optional) 
generous 1/4 tsp salt
2 cups rice or almond milk
1 Tbsp. organic vanilla extract
1 Tbsp. lemon juice
1 Tbsp. ground ginger
 
In a large bowl mix together the flours, sugar, ginger, baking powder and salt.  
Set aside.

In a medium bowl, mix together the milk, vanilla and lemon juice.

Place griddle over medium/medium high heat to preheat. 

Pour the wet ingredients into the dry ingredients. Gently stir until everything is combined. After about 10 stirs, if the batter feels too heavy, add additional milk or water to desired consistency. Be careful not to over mix.

Spread a small amount of oil (I used walnut oil — hence the blackened effect on the edges of the pancakes pictured) onto the griddle and then spoon batter onto the griddle for pancakes. Use 1/4 cup for standard sized pancakes. The batter is meant to be pretty thick so you may have to use a spoon to spread it evenly onto the griddle.

Cook pancakes on first side until the edges begin to look dry, then flip. Cook for another minute or two or until cooked through, then remove to a plate.
 
Top with desired fruit, nuts, honey or organic maple syrup and Enjoy!

I am really excited to continue sharing this new lifestyle journey with you and including all my recipe concoctions! My ultimate goal is to make a 100% gluten and dairy free Thanksgiving dinner next month that is every bit as satisfying as traditional Holiday meals.
